This land was once generously dotted with grist mills, most of which have now vanished or lie in crumbled ruins. At the few which are still in operation, however, we can not only observe millers engaged in their business, but we can also purchase the fruit of their labors. Stone-ground (or buhr-ground or water-ground—the terms are interchangeable) meal has more intense, robust flavor, and stone-ground meal is more nutritious than most store-bought meal, which is over-processed and less than fresh. This cook book concentrates on two grist mill products, buckwheat flour and cornmeal. After touring a grist mill and buying a sack of just-ground meal, do not merely take the bag home and set it on a shelf as a souvenir. Open it! Use it!
