Butter 'Em While They're Hot!

The dinner table exclamation of the South is "Take two and butter 'em while they're hot!" What could be more typically Southern than just-baked, piping-hot biscuits, muffins, and rolls at every meal? We Southerners love our breads—sweet or crusty, crumbly or corn-y, just pass the butter or gravy, honey or preserves! Baking is my hobby, and I especially enjoy preparing (and eating) small quick breads. They are fast to fix—instant gratification! I prefer to use whole wheat flour, whenever possible, both for reasons of nutrition and flavor. If you like a more delicate product, unbleached or plain white flour can be substituted.
